Pavarolo's viticultural identity is sculpted by the southern slopes of the Po hills, where vines anchor into Tertiary sedimentary rocks dating back 55 million years. This ancient, well-drained terrain, weathered by seasonal torrents like the Bossola that often run dry, provides the ideal stress for grapevines. Among the 16 protected denominations overlapping here, the highly localized Freisa di Chieri DOC, limited to a zone of just 13 municipalities, flourishes alongside the Collina Torinese DOC. These dry, prehistoric soils coax concentrated, aromatic profiles from the grapes, yielding wines that reflect this distinct Piedmontese terroir.
