PAT — Prodotti Agroalimentari Tradizionali — are Italy's 5,717 traditional foods listed in the official regional registers: products made the same way for at least 25 years, from a specific area, that never entered the EU DOP/IGP system. They are the country's culinary long tail: village breads, local cheeses, cured meats and preserves that carry real heritage without a zone-and-specification protection. Are PAT products DOP or IGP?
No. PAT are a separate, national recognition. A product can be both traditional (PAT) and later become a DOP or IGP, but on its own a PAT name has no zone-and-specification protection and no consortium enforcement.
