Casalgrasso

Casalgrasso, a quiet lowland outpost at the northernmost border of Piedmont’s Cuneo province, sustains a community of fewer than fifteen hundred residents on fertile alluvial soils. This specific river-plain terroir underpins the cultivation of 17 protected denominations. Among these, the damp microclimate nourishes the delicate, thin-skinned Fagiolo Cuneo IGP, a regional bean whose cultivation is restricted to a zone of 247 municipalities. Additionally, the local pastures contribute to the aging of Raschera DOP, proving how this small northern enclave yields some of Piedmont's most tightly defined gastronomic treasures.
