Macra

In the steep alpine terrains of Macra, a tiny Piedmontese enclave of just 42 residents in Cuneo province, isolation has preserved exceptional microclimates. Despite its minuscule population, this rugged mountain territory claims 18 protected denominations. The valley's alluvial soils nurture the delicate Fagiolo Cuneo IGP, a regional bean cultivated across a zone of 247 municipalities. On the surrounding high-altitude pastures, local herders produce the raw-milk Raschera DOP cheese. Here, the extreme alpine terroir transforms a sparse human footprint into a highly specialized sanctuary of authentic Italian gastronomy.
