Melle

Home to just 294 residents in the alpine valleys of Cuneo, Piedmont, the secluded enclave of Melle shapes its extreme terrain into a specialized food hub. This mountain pocket yields 18 protected denominations, led by the Fagiolo Cuneo IGP, a bean cultivated in the valley's well-drained alluvial soils. The surrounding high-altitude pastures also anchor the production of local cheeses like Raschera DOP. The intense temperature shifts characteristic of this valley-floor climate slow crop growth, concentrating starches and sugars to yield flavours that lowland plains cannot match.
