Montaldo di Mondovì

In the Alpine foothills of Piedmont's Cuneo province, where a community of 548 residents lives along the mountain ridges, Montaldo di Mondovì offers a rugged, high-altitude microclimate. This steep terrain nurtures 19 protected denominations. Among them, the local Fagiolo Cuneo IGP climbs poles in fertile, well-drained mountain plots, while local herds yield the raw milk destined for Raschera DOP. The dramatic elevation drops and Alpine drafts of these specific slopes concentrate the flavors of both legumes and dairy, producing distinctively sharp cheeses and tender, thin-skinned beans that cannot be replicated elsewhere.
