This unique transition zone supports 18 protected denominations. Chief among these is the Fagiolo Cuneo IGP, a local bean that thrives in the damp, silt-rich soils of the valley floor. The alpine influence also defines local cheesemaking, feeding the pastures that yield milk for the semi-hard Raschera DOP.
