High up in the steep, secluded Maira Valley, the tiny alpine enclave of Prazzo provides an extreme mountain terroir. Home to just 166 residents, this rugged environment shapes 18 protected denominations. Chief among these local treasures is the Fagiolo Cuneo IGP, a delicate bean that thrives in the well-drained alluvial soils of the valley floor, alongside mountain cheeses like Raschera DOP, forged in high-altitude pastures. The dramatic alpine temperature swings also concentrate the essential oils of wild botanicals, giving the local Genepì del Piemonte IG spirit its distinct, herbaceous intensity.
