Rittana

In the tiny alpine enclave of Rittana, where fewer than one hundred residents live amid the steep slopes of Cuneo, a unique mountain microclimate fosters 18 distinct protected denominations. The steep, sun-drenched terraced plots here are ideal for cultivating the tender Fagiolo Cuneo IGP, a local bean variety grown across a restricted zone of 247 municipalities. Additionally, the cold alpine pastures surrounding the village provide the perfect conditions for aging Raschera DOP, a historic mountain cheese. These harsh elevation gradients and pure water sources shape the distinct, concentrated flavors that define this pocket of Piedmont.
