In the mountain folds of Cuneo, the tiny Piedmontese enclave of Roaschia supports just 87 inhabitants, a demographic isolation that preserves its pristine Alpine terroir. This undisturbed environment nurtures 18 protected denominations. Among these, the prized Fagiolo Cuneo IGP thrives within a restricted cultivation zone of 247 municipalities, benefiting from sharp day-to-night temperature swings in these valleys. The high pastures also yield the distinctively savory Raschera DOP cheese. Here, geography dictates flavor: the extreme altitude and sparse human footprint allow these mountain delicacies to retain their historic, uncompromised profiles.
