Sambuco

Named after the elderberry shrubs of the Viburnaceae botanical family that cling to its rocky terrain, the alpine municipality of Sambuco fosters a rigorous terroir for mountain gastronomy. Within this high-altitude territory, 18 protected food and wine denominations overlap. The cool climate uniquely suits the cultivation of the Fagiolo Cuneo IGP, a local bean grown across a zone of 247 municipalities, alongside the production of pasture-raised Raschera DOP cheese. The sharp thermal swings of the Stura Valley concentrate flavors, distinguishing Sambuco's output from lowland agriculture.
