Valdieri, an alpine enclave of just 912 residents in Piedmont’s province of Cuneo, channels its rugged terrain into a unique culinary identity. This mountain environment shapes the character of 18 protected denominations overlapping its borders. Chief among these highly localized specialties is the Fagiolo Cuneo IGP, a delicate bean cultivated in a defined zone of 247 municipalities, alongside alpine cheeses like Raschera DOP.
