Valloriate, an alpine enclave of just 91 residents in the steep valleys of Cuneo, utilizes its high-elevation geography to yield distinctive flavors. This extreme terrain and tiny population protect a pristine environment where agriculture is shaped by altitude. The territory boasts 18 protected denominations, featuring the local Fagiolo Cuneo IGP.
