In the high-altitude alpine terrain of the Verbano-Cusio-Ossola province, where a small community of fewer than six hundred residents braves the rugged northern Piedmont slopes, the harsh climate shapes distinct mountain flavors. Premia claims 15 protected denominations that thrive in this extreme topography. Foremost among these is Ossolano DOP, a raw-milk cheese deeply tied to a restrictive pasture zone of just 37 mountain municipalities. The high alpine flora also infuses Genepì del Piemonte IG, an aromatic liqueur distilled from artemisia plants harvested from these rocky heights, proving how altitude concentrates flavor.
