Est!!! di Montefiascone DOC of northern Lazio owes its famously punctuated name to an 1111 AD legend, where the traveler Johannes Defuk’s servant marked tavern walls with "Est" to signal superior wine. What distinguishes this denomination from other central Italian white blends is its strict varietal blueprint: while Trebbiano toscano must comprise at least 50% of the vineyard, the disciplinare uniquely mandates a minimum of 5% Trebbiano giallo, locally called Rossetto, alongside at least 10% Malvasia. Cultivated across seven municipalities surrounding Bolsena, this straw-colored white allows a maximum yield of 13.0 t/ha, producing a sapid, harmonious wine with a characteristic slightly bitter finish.
