High in the Bergamo Alps, the mountain pastures of Cusio shape a dairy identity forged by altitude and steep slopes. This Lombardy municipality yields 16 protected denominations, dominated by cheeses that thrive on alpine flora. Foremost is Formai de Mut dell'Alta Valle Brembana DOP, a raw-milk cheese restricted to a tight zone of just 21 municipalities. Cusio’s high meadows also provide grazing land for the production of Bitto DOP, alongside regional classics like Salva Cremasco DOP. Here, the cold mountain climate and centuries of transhumance turn highland grass into highly prized cheese.
