Foppolo

As the highest settlement in the Bergamo province, perched at the rugged head of the Brembana Valley, Foppolo provides the extreme alpine pastures necessary for crafting legendary cheeses. This high-altitude terroir is central to the production of Formai de Mut dell'Alta Valle Brembana DOP, a mountain cheese restricted to a tight zone of just 21 mountain municipalities. The alpine herbs found in these lofty meadows also influence Bitto DOP, another highly localized delicacy. In total, 16 protected denominations overlap in this high-altitude enclave, where the sheer elevation dictates the intense flavor profile of Lombardy's most celebrated dairy creations.
