Santa Brigida

Perched along the right bank of the Averara Valley—a rugged tributary of the upper Brembana basin—the mountain outpost of Santa Brigida provides the ideal alpine pastures for 16 protected denominations. Chief among these hyper-local specialties is Formai de Mut dell'Alta Valle Brembana DOP, a mountain pasture cheese restricted to a zone of just 21 high-altitude municipalities. The steep, moisture-rich slopes shape the native herbs that feed dairy herds, yielding the complex milk required for this cheese and the neighboring Bitto DOP. Here, isolation and elevation preserve heritage dairy craft.
