Perched in the rugged alpine heights of the Bergamo province, the tiny, isolated settlement of Valleve shapes its dairy heritage around extreme mountain topography. In this high-altitude environment, dairy herds graze on steep slopes to produce the milk destined for Formai de Mut dell'Alta Valle Brembana DOP, a cheese restricted to a tight zone of just 21 upland municipalities. This demanding territory contributes to 16 protected denominations overlapping the area, including the historic Bitto DOP. The severe mountain climate ensures that centuries-old mountain cheesemaking methods remain vital to this day.
