Castrezzato

Settled in the flat, fertile lowlands of the Brescia province in Lombardy, the agricultural community of Castrezzato leverages its alluvial plains for intensive dairy farming. This specialized terroir nurtures 15 protected denominations, spearheaded by the semi-hard Provolone Valpadana DOP, a cheese whose production area extends across 726 municipalities. The local climate and abundant water meadows also sustain the production of Salva Cremasco DOP, a traditional cube-shaped cheese with a thin crust. Here, centuries of Brescian farming expertise convert grassland forage into complex, globally celebrated culinary origins.
