Zavattarello

The high-altitude grasslands of the upper Tidone Valley, dominated by Zavattarello’s stone fortress, have historically fostered the cattle farming and agriculture that define this Oltrepò Pavese territory. This wind-swept mountain microclimate is essential for curing Salame di Varzi DOP, a prized cured meat whose production is limited to just 14 municipalities. These same rugged hillsides also nurture the vineyards behind the Provincia di Pavia IGT. In total, 16 protected food and wine denominations converge here, driven by the unique intersection of Alpine currents and northern Italian viticulture.
