Perched on a high-altitude Dolomite plateau beneath the rugged Latemar massif, Nova Ponente (Deutschnofen) utilizes its cold alpine climate and dry mountain air to shape unique flavors. The persistent mountain breezes and low humidity are crucial for curing the crunchy Südtiroler Schüttelbrot IGP, a classic rye flatbread.
