Instead, winemakers focus on varietal purity, requiring a minimum of 50 percent Nebbiolo, locally called Spanna, for the base red blends while limiting yields to 10.0 tonnes per hectare. Uniquely, regulations allow a flexible dual-way declassification, letting producers shift these wines to and from the broader Piemonte DOC.
