Cavedago

Cavedago, a quiet mountain enclave of just 608 residents in the autonomous province of Trento, leverages its high-altitude climate to produce 20 protected food and wine denominations. At the forefront of its agricultural identity is the Mela Val di Non DOP, a crisp apple cultivated within a restricted zone of 39 neighboring municipalities. The local fruit harvests also supply traditional copper stills for crafting Distillato di mele trentino IG, a spirits designation spanning 166 municipalities. Here, the sharp alpine air and steep slopes naturally concentrate the sugars and aromatics in every harvest.
