Pelugo

In the mountainous province of Trento, the tiny alpine settlement of Pelugo, home to just 388 residents, harbors a surprisingly diverse culinary output with 20 protected denominations overlapping its territory. Chief among these local specialties is Spressa delle Giudicarie DOP, a historic, low-fat cheese crafted across a restricted zone of 27 municipalities. The valley's lean, high-altitude pastures historically forced cheesemakers to skim milk for butter, leaving a low-fat curd that ages into this dense, aromatic cheese.
