Coinciding entirely with the rugged Daone Valley in the province of Trento, the scattered mountain community of Valdaone provides the extreme alpine terrain essential for crafting Spressa delle Giudicarie DOP. This historic cheese is produced in a highly restricted zone of only 27 municipalities, where high-altitude pastures shape its distinctive profile. Valdaone's steep geography and alpine meadows host 21 protected denominations. Here, the physical isolation of the valley has preserved ancient farming methods, allowing local cheese makers and distillers to transform raw mountain ingredients into highly specialized, internationally recognized delicacies.
