Acquapendente

Positioned in the far northern reaches of the Lazio region, in the province of Viterbo, Acquapendente's volcanic soils foster an exceptional agricultural microclimate. Here, 15 protected denominations overlap, anchored by highly localized specialties. The sandy, potassium-rich earth nurtures the delicate Lenticchia di Onano IGP, a prized lentil cultivated across a restricted zone of only 6 municipalities. Alongside it thrives the floury Patata dell'Alto Viterbese IGP. These volcanic slopes also yield the grapes for Colli Etruschi Viterbesi DOC wines, making this northern outpost a crucial pocket of Lazio’s culinary heritage.
