Capriana occupies a distinctive alpine niche, geographically situated within the Avisio-carved Val di Cembra but historically and culturally bound to the neighboring Val di Fiemme. This dual identity shapes the high-pasture dairy heritage of the territory, where 20 protected denominations overlap. Foremost among these is Puzzone di Moena DOP, an intensely aromatic washed-rind cheese produced across a restricted zone of just 22 municipalities. The mountain grasses of these shared valleys feed the dairy herds, giving the milk a complex herbal profile that anchors Capriana firmly on Trentino's gastronomic map.
