Chief among these mountain-fringe specialties is the Rimini DOC, a wine produced across a zone of 26 municipalities. The rugged pastures also yield the milk essential for Casciotta d'Urbino DOP, a historical sheep-and-cow cheese produced within a 57-municipality zone, while local kitchens perfect the flatbread known as Piadina Romagnola IGP.
