AGROIL srl draws from the Monti Iblei an extra virgin olive oil that bears the imprint of the calcareous hills of southeastern Sicily, the island's most protected olive-growing region. Based in Modica, the company operates within a protected area of 39 municipalities, where altitude and mineral-rich soils guide the oil's profile towards a medium to intense fruitiness, recognizable in notes of green tomato and vegetal undertones. This is not a decorative detail: these herbaceous sensations are the signature of a precise territory, and each harvest captures them like a snapshot of the olive year.
