This fruit owes everything to the lava: its intense green color, robust aroma, and a profile that pistachios grown elsewhere cannot match. Cultivation without synthetic chemicals is not just a label but an agronomic choice that respects an already demanding soil. The delimited territory comprises just three municipalities, a small patch of land around Mount Etna where the regulations set stringent criteria: kernel size, moisture content, and high oleic acid levels. The Cimbalis transform that volcanic harshness into fruits that meet every parameter, offered in shell, shelled, or peeled depending on their use. Behind the product's apparent simplicity lies a restricted and unmistakable geography, concentrating a wealth of flavors and textures in just a few hectares.
