Cantine il Passo has made a clear choice: a single wine, the Aglianico del Vulture Superiore, aged in a volcanic rock cave carved into the mountain. Founded in the late 19th century on the slopes of Vulture, the family winery remains anchored to mineral soils of volcanic origin that produce reds built to last, where alcohol content and tannic structure are geared towards longevity rather than immediacy. The space itself tells the story of their method. The cave, flanked by stone presses and old fireplaces, is not a mere backdrop but a working cellar: the constant temperature of the rock aids the aging process and transforms tasting into a chronicle of Lucanian craftsmanship. Here, the geology of the dormant volcano and family stewardship converge on a single DOCG area, without dispersion. The producer concentrates everything — vineyard, rock, time — on one wine, and in that refusal to diversify lies their declaration of belonging to the Vulture.
