In Moricone, on the Sabine slopes north of Rome, Carnicelli Giuseppe produces an extra virgin olive oil that bears a single denomination, the Sabina DOP. The raw material originates in a circumscribed area across three municipalities, where long-standing geological and climatic conditions shape the character of the olive groves and the rhythm of the harvest. The recognizable mark is in the glass even before the palate: a yellow-green hue with golden reflections, which distinguishes authentic Sabina production from imitations.
