Recognized since 1973, the Bianco di Pitigliano DOC defines a white-wine enclave in Tuscany, spanning Manciano and Sorano. While the core blend demands at least 40% Trebbiano toscano, the appellation's unique regulatory feature lies in its Vin Santo. To produce this sweet wine, grapes are naturally dried to 26% sugar, yielding only 35% juice. Setting it apart from sibling Tuscan white DOCs, the disciplinare allows the vinification and minimum 18-month wood-aging of this Vin Santo to occur outside the primary cultivation zone, extending into the neighboring provinces of Pisa, Livorno, and Siena.
