Most distinct among these is the rare Vin Santo di Vigoleno. While neighboring regions allow broader production techniques, this sweet wine requires a minimum of 60% Santa Maria and Melara grapes subjected to appassimento and pressed only after 1 December. Its production is bound by uncompromising rules: the grapes must be grown, vinified, aged, and bottled entirely within the commune of Vernasca. Capped at an exceptionally low maximum yield of 5.0 t/ha, this specific passito is crafted without any sulfites or filtration.
