Salizzole

In the fertile southern lowlands of Verona, the small community of Salizzole—home to 3,744 residents—nurtures some of Veneto’s most specialized agricultural treasures among its 17 protected denominations. Chief among these is the prized Riso Nano Vialone Veronese IGP, a grain cultivated in a select zone of just 24 municipalities where pure spring waters flood the alluvial plains. This damp, microclimatic landscape also coaxes the vibrant bitterness from Radicchio di Verona IGP, limited to 55 local territories. Here, specific soil chemistry and ancient hydraulic practices yield distinct textures that cannot be replicated outside this tight-knit agricultural corridor.
