Rising 450 meters above sea level in the windswept Marghine highlands, the small territory of Birori nurtures a remarkable agricultural output. Here, the volcanic soils and high-altitude pastures fuel 15 distinct protected denominations. Chief among these is the ultra-local Provincia di Nuoro IGT, a wine designation shared with only 100 neighboring municipalities, capturing the intense sun of the Sardinian interior. This elevated microclimate also shapes the pungent Fiore Sardo DOP, a raw sheep's milk cheese smoked over local woods, alongside rugged reds like Cannonau di Sardegna DOC that thrive in this rocky terrain.
