This demanding terrain is key to the Mandrolisai DOC, a highly localized wine denomination restricted to just 7 municipalities. Here, indigenous grape varieties thrive on ancient schist soils, producing robust, structured wines. In total, Tonara overlaps with 16 protected food and wine denominations, including the sweet Sebadas IGP. The town's isolated highland setting ensures these distinct, ancient flavors survive, unaltered by coastal influences.
