The key red grape variety of Tuscany ages here for at least seventeen months, exceeding the 13% alcohol content set by the production specifications, in an area encompassing seven municipalities with volcanic soils and a continental climate. This extended aging is not a technical detail but a declaration: depth instead of speed, structure instead of immediacy. The Sangiovese, allowed to mature, reflects the character of the Amiata territory—the minerality of the soils, the thermal excursion that marks the seasons.
