In the Sacca di Scardovari, at the tip of the Po Delta, Baroni Davide operates within the Cooperativa S. Giulia, custodian of a unique denomination: Cozza di Scardovari DOP. Its character doesn't stem from technique but from the water—the brackish lagoon water, where the meeting of sea and river creates a low-salinity environment that no open-sea farming can replicate. It is precisely this hydrogeology that defines the product: remarkably tender flesh and a natural sweetness that distinguish this mollusk from its open-sea counterparts. Lagoon farming, more exposed and slower, imparts a quality that the regulations protect as irreplicable elsewhere. Baroni Davide's identity is thus inseparable from the place: not a producer working an ingredient, but a craft entirely dependent on the fragile balance between freshwater input and the breath of the Adriatic.
