Beccati Emiliano (Coop. Mitilicoltori)

Porto Tolle · Province of Rovigo · Veneto

Cozza di Scardovari DOP

In the Sacca di Scardovari, where the Po River meets the Adriatic Sea in Porto Tolle, Beccati Emiliano operates within the Coop. Mitilicoltori, in a corner of the Rovigo province suspended between land and brackish water. The lagoon dictates the rules: the lower salinity compared to the open sea shapes the mussels, yielding a tender and sweet flesh that becomes the signature of the Cozza di Scardovari DOP. Each mollusk registers its microenvironment, the rhythm of the tides, and the farming practices that govern its growth in these inland waters. Here, the lagoon's dynamics and conscious mussel farming converge in a product of uncommon delicacy, distinct from the more assertive profiles of deep-sea mussels. The result is a fruit of the lagoon that bears the imprint of its origin: measured sweetness, soft texture, a direct link to the brackish environment that nurtures it. Not just any mussel, but the expression of an amphibious territory where the salty and fresh waters of the delta find their unique balance.
