In Pachino, at the southeastern tip of Sicily, Cannata e Tagliarini cultivates the only denomination that bears the name of this land: the Pomodoro di Pachino IGP. The protected area is small, encompassing just four municipalities, where volcanic soils and a Mediterranean climate concentrate the fruit's sweetness. The production specifications set precise parameters—firm flesh, minimal placental cavity, and sugar levels consistently above 4.5 Brix—and the company adheres to these as a measure of its quality.
