For over forty-five years, Koflers Delikatessen has preserved South Tyrolean artisanal recipes passed down from grandfather Augustin through three generations. At 1,350 metres elevation, surrounded by alpine air and pristine landscape, their Speck Alto Adige IGP emerges through cold-smoking below 20°C and patient dry-curing—each ham acquiring its distinctive brown exterior and deep red flesh.
