Aurelio Piccioni raises Agnello del Centro Italia IGP across the Apennine slopes of Castelsantangelo sul Nera, part of a protected designation spanning 1,403 municipalities throughout central Italy. His lambs follow the traditional trajectory: milk-fed from birth, then moved to mountain pastures where they develop lean muscle and nuanced flavour. Each carcass—classified as light, heavy, or castrated—reflects strict production standards that distinguish PGI status from commodity meat.
