Under the direct oversight of the Consorzio di Tutela del Formaggio Piacentinu Ennese DOP, these seven operations maintain exclusive rights to the name, ensuring that this specific cheese remains one of the smallest-scale, most tightly controlled agricultural outputs in Sicily.
