Azienda Agricola Spitale dedicates its work to a single Denominazione di Origine Protetta, the Piacentinu Ennese, a sheep's cheese tied to the province of Enna and its volcanic soils. Its intense yellow color comes from local saffron, while whole black peppercorns impart a distinct spicy note; aging, for no less than six months, builds a dense and slightly crystalline paste. The denomination thrives within a restricted perimeter of nine municipalities, and it is precisely this contained scale that makes each wheel a document of the Enna territory. The company adheres to strict production standards, which govern the breed, the flock's diet, and aging times, keeping the product anchored to a pastoral heritage of inland Sicily that might otherwise be lost.
