Rising 645 meters above sea level in the Ogliastra highlands, the small community of Osini features a unique mountain climate that nurtures 17 protected denominations. Foremost among these are the iconic hand-pinched pasta, Culurgionis d'Ogliastra IGP, which is legally bounded to a zone of 26 municipalities, and the sharp, fruit-forward wines of Ogliastra IGT, restricted to 25 local territories. The sharp temperature drops of these high elevations slow down the growing cycle, concentrating natural starches and sugars to impart a distinct character to the local crops.
