Perdasdefogu

Perched nearly 600 meters above sea level in the rugged, windswept uplands of the Ogliastra province, Perdasdefogu’s mountain microclimate shapes its unique food and wine output. This challenging high-altitude terrain fosters 17 protected denominations. Foremost among them are the hand-pinched Culurgionis d'Ogliastra IGP, a stuffed pasta born of these steep pastures, and the characterful wines of the Ogliastra IGT, restricted to a tight territory of 25 municipalities. Here, intense solar exposure and sharp diurnal temperature drops concentrate the sugars in the grapes and the aromatics in the sheep’s milk, yielding intensely expressive regional flavors.
