High up in the rugged mountains of east-central Sardinia, the small, wind-swept enclave of Talana harnesses its high-altitude microclimate to air-cure its celebrated mountain ham. This rocky topography also shapes the distinct character of the regional kitchens and vineyards. Talana is one of only 26 municipalities permitted to produce Culurgionis d'Ogliastra IGP, the iconic handmade pasta pockets stuffed with potato, pecorino, and mint. To accompany these rustic dishes, the steep local slopes yield grapes destined for Ogliastra IGT, a concentrated red wine shared with just 25 neighboring communities.
