In the flat alluvial basin of the Campidano of Cagliari in southern Sardinia, Uta's low-lying fields provide the perfect microclimate for high-value agriculture. This specialized territory hosts 19 protected denominations, most notably the prickly Carciofo Spinoso di Sardegna DOP, which thrives in the clay-silicic soils of these plains. The intense Mediterranean sun also fuels the area's historical viticulture, giving rise to unique local wines such as the rare, sweet Girò di Cagliari DOC. Here, dry summers and groundwater reservoirs enable these specific, highly regulated crops to develop their distinct regional profiles.
